Chocolate Brownie Cookies
30 gr soft butter
130 gr brown sugar or white
Pinch of salt
36 gr flour
½ tsp of baking powder
200 gr 64% melted dark chocolate
90 gr chopped chocolate, white or dark
½ cup chopped pecans if desired
Mix the butter & sugar, add the eggs, salt & vanilla.Do not whip, just
Mix until smooth. Add the dry ingredients, then the melted chocolate
Which has cooled alittle just to mix, the batter will be shiney.
Fold in the nuts & chocolate chips.The mix is soft & must be refrigerated at least 45 minutes.
Preheat the oven to 180°C
Spoon the cold cookie dough on the baking sheet , and bake 10 minutes,9 minutes for small cookies.
The tops will crack and the center will still be soft. Cool on a wire rack.
These cookies are best the same day, but keep a week in a closed tin.
